Drink it now or cellar for up to 10 years. No need to decant. Maison Adam-Jaeger was created in the 1990s from the merger of two family-run Champagne houses, Maison Adam and Maison Jaeger. The former, located in the village of Berru, covers approximately 6 hectares of vineyards, while the latter, operating for four generations in Reuil, owns approximately 3 hectares. Today, managed by Regis Adam, the company cultivates the region's three traditional grape varieties (Chardonnay, Pinot Noir, and Pinot Meunier) from which it produces a range of white and rosé champagnes. This elegant Blanc de Blancs is made exclusively from Chardonnay grapes from the estate's vineyards. After two fermentations, the wine ages on the lees in the bottle for three years. In the glass, the wine reveals a straw yellow color, brightened by a fine and persistent perlage. Its aromatic profile is broad and expressive, with initial notes of fresh fruit and citrus followed by hints of brioche and hazelnut, and light vegetal touches in the background. On the palate, it is round and fresh, with a distinctive mineral character typical of the limestone soils of the Champagne region. It has a creamy texture and invigorating acidity. The finish is long and chalky. It makes an excellent aperitif for an elegant dinner and pairs well with scallop risotto, seafood, and white fish.
