Domaine Alain Chavy was created in 2003, following the division of the family business between the two Chavy brothers. The estate extends over approximately 10 hectares of vineyards, including some of the most prestigious Premier Crus in Puligny-Montrachet. The estate also includes a 5.5-meter-deep underground cellar, the deepest in Puligny. With his traditional winemaking methods and meticulous attention to detail in the vineyard, Alain Chavy has established himself as one of the most renowned producers in the area. The Chardonnay grapes come from two parcels located in the Premier Cru Les Champs Gains, that were planted between 1958 and 1962. Here, the vines enjoy a sheltered position at an altitude of approximately 300 meters above sea level, rooted in soils characterized by a light layer of reddish earth, with white pebbles and limestone. After manual harvesting and fermentation, the wine ages on the lees in oak (25% new) for at least a year. In the glass, the wine reveals a deep straw color with golden highlights and a lively and fragrant aromatic profile with notes of ripe lemon and stone fruit, white flowers, and toasted notes. On the palate, it is lean and fresh with a distinctive minerality and bright acidity. It is lively and juicy with a long finish that recalls hints of savory flavors. Try it with trout, scallop risotto, or pad thai.
