The idea is to produce easier-to-approach California Cabernets, using young vines from the three family estates (Harlan Estate, BOND, and Promontory). The results have achieved great success with the public and critics. The Mascot is a wine that celebrates the unique character of Cabernet Sauvignon and the extraordinary potential of California's terroirs. The Cabernet Sauvignon grapes are selected and hand-picked based on the perfect degree of ripeness from recently replanted hillside plots of the three estates, with vines aged between 5 and 12 years. The Mascot is a rich and seductive wine with a deep color with dark red tones. On the nose, it reveals a complex and exuberant aromatic profile with lively fruit notes, followed by intoxicating floral aromas and hints of coffee on the finish. On the palate, it is muscular, powerful and full-bodied. It has a soft, velvety texture, well-integrated tannins, and an intense fruit concentration that returns on the long, lingering finish. This is a wine that can develop well in a few years but is also ready to drink now. Pair it with grilled red meat.
